In 19th century, potteries operated in ten communities in Waterloo region: Hawkesville, St. Clements, New Hamburg, Berlin (Kitchener), Waterloo, Bridgeport, Conestogo, Kossuth and Preston. Most of the potters working at this
time in Ontario were from a Pennsylvania-German heritage.
Probably the best-known Mennonite potter of the region was William K. Eby. Eby, whose father Potter Sam taught the trade to him and his brother Cyrus, bought 10 acres of land with an existing pottery on it a half-mile south of Conestoga where he established the region's longest-running pottery business, Conestogo Pottery. The pottery was built of brick and was relatively small - only 30 x 22 feet. For several early years, Eby and his family lived in a small, warm apartment above the pottery. Like most other potters and Mennonite artisans, Eby also supported his family of nine children by farming. Occasionally, transient men would come to the pottery during the winter, knowing that they could find a warm place to sleep near the kiln which was fired day and night.
A price list of Eby's pottery from the 1890's promised that "common earthenware" such as jugs, pitchers, pie plates, flower pots, chamber pots and milk pans would be "made of the Best Material." Eby's pie plates and tableware were often decorated with twin-stemmed cherries. Eby also made unique, smaller pieces of pottery for his family and friends; many of these are glazed with a distinctive green colour.
